  • 1/3 cup pure maple syrup
  • 1 large egg,  or make  a flax egg to stay vegan (3 tablespoons warm water with 1 tablespoon ground flax)
  • 2 tablespoons avocado oil
  • 1 1/2 teaspoons pure vanilla extract
  • 1 medium Golden Delicious apple (unpeeled), cored and cut into 1/2-inch pieces (1 cup)
  • 1 or 2 medium carrots, scrubbed well, then shredded (1 cup)
  • 1/2 cup raisins

DIRECTIONS

Preheat the oven to 375 degrees. Grease an 8-inch square baking dish or a 9-inch deep-dish pie plate with cooking oil spray.

Mix together the other 1/2 cup of chopped nuts, remaining 2 tablespoons of coconut, and 1/4 tsp. of cinnamon. Top dish with the pecan-coconut mixture.
