Refreshing Grasshopper Bars

These bars are refreshingly delicious and easy to make.  They are packed with nutritious ingredients and are a great replacement for processed sugar-laden treats. Whip up a batch and you have a quick “go-to” treat waiting in the freezer.

Mint Cream Layer

  • 1 Hass avocado
  • 1/4 C honey (or sweetener of your choice)
  • 6 T coconut oil, melted
  • 1 1/2 C shredded unsweetened coconut
  • 3/8 tsp mint extract
  • dash of salt

Chocolate Layer

  • 1/4 C coconut oil
  • 2 T honey (or sweetener of your choice)
  • 1/4 C cocoa powder
  • 1/4 tsp vanilla
  • dash of salt

Preparation Steps

Mint Cream  Layer

  1. Line a 9 X 9 baking pan with foil.
  2. Place all ingredients in high powered blender. Blend until smooth.
  3. Layer in baking pan and place in freezer.

Chocolate Layer

  1. Melt coconut oil and honey in a small saucepan over low heat.
  2. Remove from heat and stir in remaining ingredients.
  3. Pour over chilled mint cream layer and return to freezer for approximately 15 minutes, until hardened.
  4. Remove from foil and cut into bars.

(Store in freezer.)
