Refreshing Grasshopper Bars
These bars are refreshingly delicious and easy to make. They are packed with nutritious ingredients and are a great replacement for processed sugar-laden treats. Whip up a batch and you have a quick “go-to” treat waiting in the freezer.

Ingredients
Mint Cream Layer
- 1 Hass avocado
- 1/4 C honey (or sweetener of your choice)
- 6 T coconut oil, melted
- 1 1/2 C shredded unsweetened coconut
- 3/8 tsp mint extract
- dash of salt
Chocolate Layer
- 1/4 C coconut oil
- 2 T honey (or sweetener of your choice)
- 1/4 C cocoa powder
- 1/4 tsp vanilla
- dash of salt
Preparation Steps
Mint Cream Layer
- Line a 9 X 9 baking pan with foil.
- Place all ingredients in high powered blender. Blend until smooth.
- Layer in baking pan and place in freezer.
Chocolate Layer
- Melt coconut oil and honey in a small saucepan over low heat.
- Remove from heat and stir in remaining ingredients.
- Pour over chilled mint cream layer and return to freezer for approximately 15 minutes, until hardened.
- Remove from foil and cut into bars.
(Store in freezer.)
