Grain-Free Cupcakes with Yam Frosting

Here is the recipe:

  • 1/2 C coconut flour
  • 6T cocoa powder
  • 3/4 tsp. baking soda
  • 1/4 tsp sea salt
  • 6 organic eggs
  • 1/2 C maple syrup
  • 1/3 C melted coconut oil
  • 2 tsp. organic vanilla

Preheat oven to 350 degrees. Place cupcake liners in muffin tin.  Whisk dry ingredients. In a separate bowl, blend wet ingredients. Pour wet into dry and whisk.

Spoon into cupcake liners (we use an ice cream scoop;  it is the perfect amount). The liners should fill all the way to the top. Bake 20-25 minutes.

Now for the frosting . . .

Dairy Free Cream Cheese Frosting

  • 3/4 C cooked sweet potatoes
  • 6T coconut oil
  • 1/4 C maple syrup
  • 2T applesauce
  • 2T arrowroot powder
  • 2 tsp. organic vanilla
  • pinch of sea salt

Mix all together and place in freezer to harden. It will have the consistency of cream cheese frosting.

Makes 10-12 cupcakes.
