Finding a healthy, nutritious cracker is a challenge! These crackers have a cheesy flavor. They will not taste like crackers off the store shelf but they are a great alternative to crackers filled with preservatives.
Give your taste buds time to adapt to new flavors. Adding herbs to your food will help you make that transition. It takes a while to adjust when you start going preservative free. It is worth it!!
Couple these crackers with a healthy soup, like Roasted Red Pepper, or Multibean Minestrone. These crackers are also great with Roasted Winter Vegetable Soup (coming soon!).
TIP: This recipe incorporates Chia Seeds. These seeds are packed with super nutrients and they help control hunger. They are a super egg “replacement” in many baked recipes. Just mix 1T Chia seed with 3 T water and set for 5 minutes. The mix will “gel”. Then incorporate the gel into your recipe.
TIP: This recipe incorporates Nutritional Yeast. This is deactivated yeast that is a complete protein containing the good omega-3 fats. It also contains B-complex vitamins and is sometimes fortified with B12. It has a strong cheesy flavor. You can spread it on popped corn for a tasty butter substitute.
Dry Ingredients
- 1 ¾ Cup almond flour
- 3 T nutritional yeast (We use Bob’s Red Mill Large Flake Nutritional Food Yeast)
Wet Ingredients
- 1 Chia Egg (We use Oh so pure! Certified Organic Chia Seed) (NOTE: Mix IT Chia seed and 3 T water. Set for 5 minutes. You will have a “gel.”)
- 1T melted coconut oil
- 2 T lemon juice
- Thyme flakes (optional)
Step 1:
Combine dry ingredients (except Thyme flakes).
Step 2:
Combine wet ingredients (including the chia gel).
Step 3:
Add thyme flakes (as many as you prefer).
Step 4:
Roll dough between parchment paper.
Step 5:
Cut with cracker mold or pizza cutter. (We use fluted square cookie cutters purchased on Amazon.com)
Step 6:
Slide onto cookie sheet on bottom parchment paper.
Bake at 350 degrees for 12-15 minutes, till golden.
Store in an airtight container.
