- 1 cup Organic Brown rice or Heritage Grain blend rice (available on Amazon.com)
- 3/4 cups sliced fresh mushrooms
- One onion (chopped)
- ¾ cup shredded carrots
- ½ cup dried cranberries or cherries
- ¼ cup fresh parsley
- 2 Tablespoons chopped fresh basil
In a medium saucepan simmer rice and two cups water (or broth) covered. Simmer for 20 minutes and add the remaining ingredients. Continue cooking for another 20 to 25 minutes or until tender. Your done!
