- 2 lbs. green beans cut into 1 1/2 inch pieces
- 1/4 cup olive oil (I used Old World Olive Co. Meyer Lemon Extra Virgin)
- 3 Tbs. lemon juice
- 3 Tbs. balsamic vinegar
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- 1/4 tsp. ground mustard
- 1/8 tsp pepper
- 1 medium red onion – chopped
- 2 cups cut up fresh tomatoes – in chunks or your can do cherry tomatoes -halved
- 1 cup cheese (cubed hard cheese or feta cheese)
Cook beans 8-10 minutes (steam) or boil. Place in ice water to cool. Whisk liquid and spices. Cover and refrigerate. Add tomatoes and cheese before serving. Makes about 8-12 servings.
