Delicious Balsamic Summer Green Bean Salad

  • 2 lbs. green beans cut into 1 1/2 inch pieces
  • 1/4 cup olive oil (I used Old World Olive Co. Meyer Lemon Extra Virgin)
  • 3 Tbs. lemon juice
  • 3 Tbs. balsamic vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground mustard
  • 1/8 tsp pepper
  • 1 medium red onion – chopped
  • 2 cups cut up fresh tomatoes – in chunks or your can do cherry tomatoes -halved
  • 1 cup cheese (cubed hard cheese or feta cheese)

Cook beans 8-10 minutes (steam) or boil.  Place in ice water to cool. Whisk liquid  and spices.  Cover and refrigerate.  Add tomatoes and cheese before serving.  Makes about 8-12 servings.
