Quinoa Summer Salad

QUINOA SUMMER SALAD WITH AVOCADOS

SERVES 8-10

INGREDIENTS:

  • 2 Cups Chicken or Vegetable Broth
  • 1 Cup uncooked Quinoa
  • 1 Large Tomato, Diced
  • 2 Stalks Celery, Diced
  • 2-3 Tbsp. Lime juice
  • 2 Tbsp. Lemon juice
  • 1/2 Cucumber, Diced
  • 1/4 Cup Chopped Black Olives
  • Salt and Pepper to taste, or sprinkle Herbamare seasoning to taste

Instructions:

Cook quinoa in the 2 cups broth for about 15 minutes, (or look at package directions for time).  Let cool.

Add all ingredients together and toss gently with lime and lemon juices.  Cut up avocado and add to top of salad.  Sprinkle with seasoning. Chill until ready to serve.

*Add any other vegetable ingredients you wish, like chopped up sweet onion or shallots!
