Serves 6
Dressing Ingredients
- 3 T cider vinegar
- 2 T honey
- 2 tsp Dijon mustard
- 1.5 tsp poppy seeds
- 1/4 tsp salt
- black pepper
- 3 T olive oil
- 1/3 C diced red onion
Cole Slaw Ingredients
- 1 lb. kale (approx. 2 bunches)
- 2 medium Granny Smith or Fuji apples
Preparation Steps
- Place all dressing ingredients, except oil and onion, in a jar and shake.
- Whisk in oil. Stir in onion.
- Wash, dry, and chop kale (discard stems) into ribbons.
- Core and slice apples.
- Combine with dressing and allow to sit at room temperature for at least 15 minutes.
