Kale Apple Salad with Poppyseed Dressing

Serves 6

Dressing Ingredients

  • 3 T cider vinegar
  • 2 T honey
  • 2 tsp Dijon mustard
  • 1.5 tsp poppy seeds
  • 1/4 tsp salt
  • black pepper
  • 3 T olive oil
  • 1/3 C diced red onion

Cole Slaw Ingredients

  • 1 lb. kale (approx. 2 bunches)
  • 2 medium Granny Smith or Fuji apples

Preparation Steps

  1. Place all dressing ingredients, except oil and onion, in a jar and shake.
  2. Whisk in oil. Stir in onion.
  3. Wash, dry, and chop kale (discard stems) into ribbons.
  4. Core and slice apples.
  5. Combine with dressing and allow to sit at room temperature for at least 15 minutes.
